WTH Wednesday...The State Lunch Inspector

In Raeford, North Carolina, a four-year old little girl's sack lunch, which was lovingly packed by her mother, was rejected as unsatisfactory by the West Hoke Elementary school's state lunch inspector.

The lunch, which was lovingly packed by her mother, consisted of a turkey and cheese sandwich on white whole wheat bread, a banana, some potato chips, and a container of apple juice.

The state lunch inspector deemed the lunch unhealthy and gave the little girl some chicken "nuggets" instead of the lunch, which was lovingly packed by her mother.

The offending lunch, which was lovingly packed by her mother, was returned home with the child. Included was a note explaining that the child was not permitted to eat it's contents because it didn't meet the state's school lunch law, which says in part; that every lunch eaten at school must contain 1 protein, 1 dairy, 1 grain, and 2 fruit or vegetables.

Also included in the returned lunch, which was lovingly packed by her friggin' mother, was a bill for $1.25 for the "nuggets."

I shit you not.

WTH is going on in North Carolina?!?!?

I don't even know where to begin. Well, ok, how about...THEY HAVE A STATE LUNCH INSPECTOR?!?!?

{Can you imagine waking up next to that every morning?}

What's next...a finger painting Czar? (Cuz, I want that job!)

Secondly, I have yet to meet a chicken with any kind of natural "nuggets." I don't even want to know what's in a "nugget" let alone eat one. If the state lunch inspector thinks that "nuggets" are healthier than a turkey and cheese sammie on whole wheat bread then I'll kiss a goat on the ass before I'd ever eat at his house.

Thirdly, according to the state lunch standards the home packed lunch, which remember, was lovingly packed by the child's mother, needed to include 1 protein, 1 dairy, 1 grain, and 2 fruit or vegetables.

Hmmm...let's see...I'm thinking that the turkey and cheese sandwich counted for 1 protein, 1 dairy, and 1 grain. And, that the banana and apple juice counted as the 2 fruit.

What did the "nugget" count for? A serving of grease-ball perhaps?

Lastly, can I just say that this Country has caught a ride on the crazy train straight to insanity-hell. How dare the government decide that a perfectly decent sack lunch, which was lovingly packed by a mother, was unsatisfactory.

Had the lunch contained nothing but Twinkies and Ho-Ho's, or perhaps a brewski, I could see the need for some intervention. But, as a general rule, lawmakers need to stop intruding on our personal lives. Parents are responsible to make decisions for their children's diets. And other than case of clear neglect, the government needs to butt out.

Sunday Supper Secrets...Best Blueberry Coffee Cake

Coffee cake is one of my most favorite treats and blueberry is, in my opinion, the best kind of coffee cake of all. But, I'm pretty picky about my coffee cake. I want it heavy, dense, sweet, and most of all, super moist.

This recipe hits all my markers. Everything about it is just right. If you love coffee cake as much as I do, I'm sure you'll love this one.

Here's What You'll Need:

3 cups Bisquick
3/4 cup white sugar
1/4 cup vegetable oil
1 1/2 teaspoon vanilla
2 eggs
1 cup vanilla yogurt
1/4 cup orange juice
2 cups fresh blueberries (not frozen)
1/4 cup raw sugar

Here's What You'll Do:

In large mixing bowl, beat together Bisquick, white sugar, oil, vanilla, eggs, and yogurt.

{Sorry this picture is not so great...that really is just the vanilla sitting there with the eggs. I know it looks a little disgusting.}

Mix in orange juice.

Gently fold in blueberries by hand.
Pour into greased and floured bundt pan.

Bake at 350 degrees for about 15 minutes, until cake poofs up, but is still moist on top.
Sprinkle raw sugar over top. (I did it this way to prevent the raw sugar from sinking down into the batter, but you could sprinkle it on before any baking time. I just wanted the top super crunchy.)

continue baking another 35-45 minutes until golden brown and tests done when toothpick comes out clean.
Total baking time will be 50-55 minutes at low altitudes, 60-65 minutes for altitudes above 3500 feet.
Cool in pan on a wire rack for 20 minutes, then remove from pan and cool completely. (Overnight is best.)

Through is health care overhaul, President Obama is trying to force religious schools and hospitals to provide contraceptive and so-called family planning (which is really code for abortion) coverage to their employees.

The problem is that the religious doctrine behind some of these institutions forbids the use of any kind of birth control and especially abortion.

Let me be totally upfront; Personally, I believe that it is stupid, archaic, draconian, misogynistic, and just plain WRONG for religions to butt into any and all woman's health issues.

However, the United States Constitution demands a separation of Church and State. This prohibits our government from intruding on, dictating to, or forcing religious institutions to alter, change or go against doctrine, beliefs, or teachings. To do so is simply unconstitutional and illegal and anti-American.

So, I ask you Mr. President...WTH?!?!?!

You are supposed to be a Constitutional scholar, a Constitutional law professor. Did you miss the memo on separation of Church and State?

Just because you personally don't like something a religion does or doesn't believe in doesn't mean you can force them to see it your way. They are constitutionally protected from the whims of politicians.

In this Country, no one is forced to adhere to any religious teachings. If you don't agree with the Catholic Church's stand on birth control then you don't have to be a Catholic. If you think there is nothing wrong with having abortions whenever you feel like it, don't be an Evangelical Christian. If you love apple martinis and espresso, and plan to drink them at every opportunity, I suggest you don't be a Mormon. And, if you want your health insurance to cover birth control pills, don't CHOOSE to work at Our Lady of Grace's Catholic Hospital!

I wouldn't, and if I did, I would just pay for my own birth control pills. Nobody OWES me birth control pills. When considering an employment opportunity one always inquires about the offered pay. Well, the offered benefits are no different. You can accept or reject them. It's your choice. If you don't like your offered compensation package, then move on.

It's common sense Mr. President. Use your brain, and let the rest of us Americans use our own brains as well. We don't need or want you to make all of our decisions for us.

For our {Me, Ash, & Jordan's} last day in Washington, Kristi thought it would be fun to have a family day in Seattle...and she was right.

We all piled in the cars and headed West on I-90.

It was a glorious day. Sunny and beautiful, the clearest bluest skies, as only Seattle can do. Actually, we were blessed and all three days were gorgeous.

Our first stop was Kerry Park in Queen Ann for some playtime and some photo ops...

Tons of Fun in Washington: Part One - Jammies, Grills, Chocolate Milkshakes, Pepsi, and Crayon Art

Last Friday I made a quick trip up to Ellensburg to spend the weekend at Kristi's to attend EmmaLee's fifth birthday party. Ashley and Jordan traveled up for the weekend as well.

I had the BEST time EVER!

I met up with Ash and Jordan at the SeaTac airport and we headed off to Ellensburg all together. On the way we made a quick lunch stop at our beloved Azteca restaurant. YUMMO! It was soooo delish.

When we finally arrived at Kristi's house Bryce and Emma were patiently waiting for us....well, as patient as a three-year and a four-year old can possibly be...NOT! They were just too cute.

Of course, presents from Grammie (and Grandpa, too) are always part of the package. After all, spoiling (loving) grandkiddos is the best part of being a grandparent!

When Mark and I were in Las Vegas a couple weeks ago I picked up these adorable jammies at the M&M Store...

They were a big hit, especially with Bryce as jams are his favorite clothes to wear...at ANY time.

I had also found sets of "grills" while in Las Vegas. I thought they were hysterical and figured the kids would love them. They have a lollipop on the back side that holds them in place in your mouth...

I taught Emma how to get her gangsta moves on...

Even Peyton tried out the gangsta grill...

For dinner, we decided to go to a local burger place - the Red Horse Diner. Em and I had old fashioned chocolate milkshakes...

Later that night it was story and snuggles time. It was a great start to a great weekend!

When I first arrived, Kristi had this waiting for me...

She made it herself! It was in a black 8x10 frame along with a 12-pack of Pepsi. That girl knows me well.

Sunday Supper Secrets...Oven Roasted Brussels Sprouts

Next to asparagus and beets, Brussels Sprouts are my fave vegetable. I'll eat them pretty much any way - boiled, steamed, fresh, frozen, whatever - but, oven roasted is my all time favorite way to prepare and devour these little puppies.

Brussels Sprouts seem to have a bad reputation. More often than not, whenever I mention them, I get the yuck-face. I don't get it. They're like cute little mini cabbages. Mmm-mmm, delish. What's not to love about that??? And they are so good for you. Even my oh-so-picky Hunk of Burning Love eats them...need I say more? You gotta try them!

Here's What You'll Need:

Fresh Brussels Sprouts (Costco's are the best!)
Extra Virgin Olive Oil
Salt
Pepper
Granulated Garlic

Here's What You'll Do:

Wash Sprouts.

Trim stem and cut in half, lengthwise.
Remove outer (old) leaves.

Toss sprouts in a little olive oil, maybe a couple tablespoons, and the salt, pepper, and granulated garlic, all to taste (liberally).
Spread out in a roasting pan.

Roast in a 400 degree oven for 35-40 minutes, stirring twice while cooking.

Thankful Thursday ~ Baby Brothers

Today I am grateful for being blessed with two baby brothers, Steven and David. Everybody should have the opportunity to have baby brothers to grow up with.

For me, having little brothers taught me how to mother. I felt very protective of my brothers and like they were my babies, especially David as he is sooooo much younger than me. And even though Steven was only three years younger, I felt very maternal towards him, too.

Steven is gone and David is all grown up. I treasure my childhood memories of them both and I am grateful for the comfortable and warm friendship I now have with David.

WTH Wednesday...Newt: Being an Adulterer Makes Him More "Normal"

Huh???

Yep. Newt says that his having extra-martial affairs make him "more normal" than Mitt Romney, who "only has sex with his wife" and therefore he is more in touch with the Everyday American than Mitt.

WTH?!?!? He can't be serious...can he?

He is dead serious, and I, as an Everyday American, am offended.

Gingrich's assertion implies that a lack of honesty, integrity, and morality is the Everyday American norm. That lying, cheating, and generally being a douche-bag is what normal Americans do, accept, and expect from others; including their leaders namely the POTUS.

Um...NOT!

Fortunately, I know (personally) very few people who share Newt's beliefs and moral compass. Ninety-nine percent of all the people in my life...friends, family, business associates, and acquaintances...believe in living honest and moral lives.

Am I suggesting that there is no room for mistakes? No. We are all only human after all, and stumbling is expected in everyone's lives. But, the people I associate with, recognize those stumbles as mistakes and, I believe, that they really try to learn from them and to do better in the future.

So, when Newt Gingrich puts Mitt Romney down for only being married once and being faithful to his wife, I'm a little confused. It seems to me that those are qualities to admire not ridicule.

What Gingrich's comments do show me is the kind of man Newt really is and what his true character is...and it's not what I want in a President.

No "Syndrome" Here!

It's official, we are Empty Nesters.

Meghan moved out last week, leaving our nest empty...if you don't count me, Mark and our three furry little beasts.

So, how do I feel about that?

Pretty darn GREAT!

As I recently explained to Meghan, the goal of parenting is to work your way right out of your job. It's about raising up a child to eventually mature and leave you to go on with their own life.

Mission accomplished.

Yes, it is a lot quieter around here. Yes, I miss seeing her everyday. And, yes, there are bittersweet moments. But, mostly, I am happy that she has become an independent adult, and I am happily embracing this new chapter in my life.

I'm excited for Meghan and her future as she takes on adulthood. The whole world is open to her and I am looking forward to watching (and hopefully participating in...at least a little) her navigate her life as she chooses. I am also excited to see how our relationship continues to grow and to see how it changes as well.

Meghan isn't the only one who is beginning a new phase in her life, and I am looking forward to find out what the future now has in store for me. There are so many things I want to do, places I want to go, and things I want to experience.

I feel like the fat kid at a buffet, and I can't wait for the feast to begin.

This is probably, possibly my most favorite picture of Meghan, ever. She looks like an angel to me. And, I have to say, that when she was this age she pretty much was an angel.

Meghan was always a very sweet and caring little girl. She was loving and affectionate, always ready with a hug, kiss, or an I love you. She was also very mild tempered and easy to get along with.

When she was eight and she was baptized, this was her confirmation dress. I remember special ordering it and waiting for it to arrive. And when it finally did arrive, I was delighted with it. It was perfect. It was angelic.

Now, Meghan is all grown up and moved out on her own. And I am happy to say that she is still sweet, caring, loving, affectionate, mild tempered, and easy to get along with.

Sunday Supper Secrets...Lawry's Spinning (House) Salad

As I promised last week, I present the Lawry's Restaurant's Spinning Salad.

When I read the menu and saw the list of the salad ingredients, I was extremely skeptical. First off, I hate hard boiled egg...yuck-o. And then to mix the egg with canned shoestring beets in a salad sounded horrific.

I considered passing on the salad, but in the end I decided to at least give it a try. To my shock, and delightful surprise, it was fabulous! I highly recommend you try it.

Oh, and the reason they call it the Spinning Salad is because they spin the bowl around while they are pouring the dressing on...that part is a little lame, but the salad is delish!

Here's What You'll Need:

For the salad...
1 small head romaine lettuce, torn into bite sized pieces
1 small head iceberg lettuce, torn into bite sized pieces
1/2 cup baby spinach leaves, torn into sprigs
1 cup shoestring beets, well drained
1 egg, hard boiled, peeled and diced fine
Lawry's seasoned salt, to taste
Pepper, to taste

For the dressing...
3 tablespoons cider vinegar
3 tablespoons water
2 tablespoons applesauce
2 teaspoons Worcestershire sauce
1 1/2 teaspoons dry sherry
1 1/2 teaspoons Lawry's seasoned salt
1 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon garlic powder with parsley
2 drops hot pepper sauce
1/2 cup vegetable oil

Here's What You'll Do:

In blender, combine all dressing ingredients EXCEPT the oil.
Blend on high until thoroughly mixed, about 30 seconds.
With the motor running on high speed, slowly add oil through the pour hole on the lid until combined, about 2 minutes.
Refrigerate several hours before serving.
Pour a generous amount over all salad ingredients, toss together and serve.

Left-Overs

As I mentioned a couple days ago, I had begun spring cleaning.

I started off with the nasty medicine closet because I have been promising myself that I would do it for the past 2 YEARS now, but every time I approached it, I felt to overwhelmed. So, I just closed it back up and walked away.

I knew it was full of old, out-dated, way-passed-expiration, prescription and over-the-counter meds. I also knew that it was going to be a miserable and tedious job.

Turns out, it was kinda interesting. I found Rx's from more than 15 years ago! That means that I actually packed them up and moved them from Washington to Utah twelve years ago.

I had no idea I was such a pack-rat. Check out all the left-over pills from the past fifteen years...

There must be thousands of old pills in that dish-tub. They weigh a total of 7 pounds...yes, I weighed them. Half of them I couldn't even read the labels anymore, so I have no idea what they even are, or who they were prescribed for.

Scary.

Back in the old days, we would flush these suckers down the toilet. I'm told that's a no-no now-a-days. I asked my friend Shelly, who works for the city and knows EVERYTHING, what to do with them all. She told me their is a drop-off receptacle at the Cottonwood Heights Police Department offices that takes old drugs and properly disposes of them.

I'll be there first thing Monday morning.

The Magic of Photo Shop

I have been trying to find just the right picture to hang in one of the rooms in my house. I had looked in all the usual place, but I just hadn't found exactly what I wanted.

I was describing to Meghan what I had in mind when she suggested that I use one of my own photographs. I was intrigued, but skeptical.

I asked her which photo she was thinking of and she said the one I took in Italy of the Grand Canal at sunset.

I liked the picture well enough, but I wanted something a little more muted and, well, more...professional.

She copied my original to her thumb-drive, took it home with her and "played around" with it on Photo Shop.

This is what she came up with on her first draft/practice/example...

I am stunned. It's exactly what I had in mind. I can't believe what she did to my regular old boring photo. It still needs a little work, mostly cropping, but then I'm going to have it put on canvas and frame it!

I'll be like a real photographer with a real piece of original art!! It'll be almost as great as being a published author. Can you even imagine?!?!?

WTH Wednesday...Separation of Church and State

Just like sex, religion should be practiced at home and NOT at school.

Without exception, every single person I have ever known that wanted prayer in schools was a conservative Christian, who believed (assumed) that those school prayers would only be Christian prayers.

I could never understand such, well frankly, stupidity. And here's a perfect example of the crazies out there who think their "religion" should be shoved down our school children's throats while at public schools...

In Buncombe County, North Carolina the Gideons International donated a box of Bibles to one of the local schools. The books were free and students who were interested could take one. A twelve-year-old boy apparently was interested because he took one home...to his Wiccan mother, Ginger Strivelli.

Strivelli was unhappy about her son choosing to bring home a bible so she showed up at the school with a bunch of copies of The Craft, a book of spells.

Of course, that didn't go over well at all. The school refused to accept her donation.

Well, no shit, Sherlock. WTH was she thinking?!?!?

I'll tell you what she was thinking, she thinks the school should be fair and if they offer material for one religion, then they should offer material for all religions. Unfortunately, and legally, she's right. Which is exactly why public schools need to stay out of any and all religions.

The public school system here in America can barely teach our kids to read and write, do we really want to trust it with teaching morality and spirituality? I don't.

If parents want religion to be a part of their kids daily education they should send them to a private school that teaches the religious principles the parents want taught. Otherwise, parents should take their kids to Church and discuss their own personal spiritual beliefs at home.

Now, am I really all that offended that the Gideons donated bibles to the school in North Carolina? No. But, the school should have known that they were opening themselves to this kind of problem. They need to stick to teaching reading, writing, and arithmetic.

P.S. Now Ms. Strivelli is suing the School District.

Mark thinks I'm torturing the girls when I dress them in little sweaters, jackets, swimsuits or Halloween costumes. I completely disagree. And, no, I do not put them in real baby clothes...because that would be just weird.

Ralph was a cock-a-poo and he was a great little dog. My mom used to have him shaved down in the summer to help him stay cool. For some reason his head was never shaved, so he looked like a lion. When I was in the third grade I told my teacher, Mrs. Thompson, that I had a pet lion and I asked if I could bring him in for show-and-tell. I don't think she believed that I had a real pet lion because she said yes, I could bring him to school.

One day my mom's cousin came to visit. She and her family fell in love with Ralph. They lived on a farm in Eastern Washington. My mom gave Ralph to them and they took him home with them. He literally went to "live on a farm"...lol.

Sunday Supper Secrets...Lawry's Whipped Cream Horesradish

A while back I spotted the Lawry's Prime Rib restaurant in Las Vegas, and was intrigued. I use Lawry's Seasoning Salt all the time and the logo on the building it was the same. I looked them up on the internet and I knew I had to eat there someday.

Someday came a couple weeks ago, and it was everything I had hoped for. The restaurant is located at 4043 Howard Hughes Parkway, just a couple blocks of the Strip. It's a first class place with, not surprisingly, extremely first class prices...bring your American Express card.

The menu is very limited as the whole purpose of the restaurant is to serve prime rib. They do offer a fresh fish of the day, a daily vegetarian plate, and a couple cuts of steaks, and that's about it. If you don't want prime rib it's probably not the place for you.

It's also not a cheap date. Everything is al a carte, with the smallest cut of prime rib starting at $37.00. For Mark and I the total bill was about $175.00 (before tip) and we didn't order dessert, we were just way to stuffed. But let me tell you, it was worth every single penny.

The basic entree comes with your choice of prime rib cut, salad, mashed potatoes with gravy, and Yorkshire pudding. They offer other side dishes, veggies, lobster, and appetizers. One of the sides is creamed corn which is the exact same recipe I use, except they don't add the Parmesan cheese. (Click here to see my recipe.) I had to try theirs to see if it was a good as mine...it was, although I really like adding Parmesan to it.

Here's what I had...

It was divine. Best prime rib I've ever eaten and I've eaten a lot of prime rib. It's even better than at my beloved Market Street Grill, which was my all time favorite.

Everything is prepared and served table-side with these domed oven like things...

They make quite a show out of the whole thing...it's all very entertaining. They even make their salad (called Spinning Salad) table-side where they spin one stainless steel bowl inside another that is filled with ice, thus the name. (I will post that recipe next week.)

Like I said, it was all amazing, but one little tiny thing really stood out for me...the whipped horseradish. I didn't think I liked horseradish. I was wrong. I loved this stuff. I could have just eaten it by the spoonful. You seriously have to try it. I bet you'll love it too.

Here's What You'll Need:

1 cup whipping cream
1/4 teaspoon Lawry's Seasoning Salt
2 tablespoons prepared horseradish, well drained, or 4 tablespoons finely grated fresh horseradish root
Dash of Tabasco sauce

Here's What You'll Do:

Whip cream until stiff peaks form.
Fold in remaining ingredients until well blended.
Serve with roasted prime rib or any beef roast you love.

I love my mini Reese's Peanut Butter Cups, but when I saw these suckers, I just HAD to have them!

Yup, that is a full sized loaf of bread sitting there.

I found these babies at the New York New York Hotel and Casino in Las Vegas where they have a monster candy shop with this Jelly-Belly Statue of Liberty...

They have some other GIANT candies, but Reese' Peanut Butter Cups are my fave.

Each Cup weights 1/2 pound. I'll never be able to actually eat these things. Maybe I should serve them to the whole family for Sunday dinner dessert.

WTH Wednesday...An Unimaginable Crime

Jackie Burkle, 22 (pictured below) of Huxley, Iowa has admitted to killing her newborn twin baby girls and them tossed them into her car trunk.

WTH was she thinking?!?!?

Iowa has a Safe Haven Law where a newborn baby can be dropped off at any hospital, for any reason, with no questions asked, and without fear of prosecution.

So, why did she kill them? I can't understand this on any level. It makes me absolutely sick and breaks my heart.

I seriously hope that authorities will discover that Burkle has some kind of terrible mental illness. It would be the only explanation that I can even begin to wrap my head around. Otherwise, we're talking about an act so evil I can't even comprehend it.

She is currently being held on $1 million bond. A preliminary hearing is scheduled for this coming Friday, Jan. 20th.

As a side note, did you know that President Obama is ok with partial-birth and late term abortions (which can mean full term) where they deliver a healthy living baby half way out of the mother and then kill it? He, and supporters of late term abortions, believe the baby is still part of the mother's body and she can do what she wants with it.

What if the baby is full expelled but the umbilical cord is still attached? Is the baby still part of her body then? Can the mother still legally murder the child? And how different is that from what Jackie Burkle did?

Burkle faces life in prison if convicted. So how is it that doctors, nurses and mothers are allowed to murder third trimester babies?

It's something to think about.

Sunday Supper Secrets...Best Banana Bread

Finding a great banana bread recipe has been difficult for me. I don't know how many recipes I've tried. For some reason, they just don't cut it for me. It is possible that I may be a little bit picky. This recipe is perfect.

*Notes:
1.)For some reason, that I don't understand, you CANNOT double this recipe. You have to make it one batch at a time or it will fail.
2.) You have to use a BIG loaf pan...ten-inch for sure, or two smaller ones.
3.) Don't under-cook or sliced bananas will be a tad slimy.
4.) We, me and the fam, like it even better the next day.

Here's What You'll Need:

1 3/4 cups unsifted all purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 ripe banana sliced on diagonal 1/4 inch thick
2 ripe bananas, mashed
2 eggs, beaten
1/2 cup vegetable oil
1/4 cup plus 1 tablespoon milk
1 teaspoon vanilla extract
1 1/2 tablespoons raw sugar for topping

Here's What You'll Do:

In a medium mixing bowl, mix together flour, sugar, baking soda, and salt, set aside.

In large mixing bowl, blend together mashed bananas, eggs, oil, milk, and vanilla.

Add dry ingredients to banana mixture, mixing well.
Pour into well greased and floured 10 inch bread pan.
Shingle banana slices around edge of loaf, leaving the center uncovered to allow for rising.
Sprinkle top with raw sugar.
Bake at 325 degrees for 1 hour and 15 minutes, until golden brown.
Store in zip-lock bag.

Wildlife authorities in Hawaii are offering $30,000.00 in reward money to solve the mystery of who is killing critically endangered monk seals. Since November, two seals were killed on the island of Molokai and one was slain on Kauai. A fourth possible killing, also on Molokai, is being investigated.

WTH?!?!?

Who would want to hurt these beautiful creatures???

The Hawaiian monk seal is one of the most endangered animals in the world with only 1,100 living.

In case you don't know, I am Doug Seus's BIGGEST fan. I have followed his career and the work he does with, and to save, grizzly bears for years. Twelve years ago, when I found out that Heber City (Doug Seus's hometown) was just an hour away, it was all I could do to not drive up and down every street in Heber to try to meet Doug and his bears. (I didn't actually do it...I only fantasized about it.)

It could be said that I am a little obsessed, but in a good non-psychotic non-crazy-stalker kind of way.

Mark and I were invited to spend an afternoon with the whole Seus family at their Heber City home. And it was fantastic. They are the nicest people and where very gracious hosts. Doug's wife Lynne prepared a lovely luncheon for us and we were privileged to meet their friend and Native American Medicine Man, Julius.

I even got to sneak a peek at Tank, Bart, and Honey Bump out in their pens!!!

Best. Day. Ever.

Sunday Supper Secrets...Market Street Grill's Gulf Shrimp Cocktail

Truth be told, my number one most favorite thing to make for dinner is a reservation. And, my number one favorite place to make that reservation and have dinner is Market Street Grill.

Because all their seafood is flown in daily from Seattle and Alaska, they have the freshest seafood in Utah. In addition to their restaurants, they have fish markets, which is where I buy almost all of my fish and shrimp. (Costco sells killer salmon, halibut, and lobster tails, so I will buy seafood there too.)

The Market Street market's cooked jumbo gulf shrimp is amazing. It's exactly what they serve in the restaurant when you order the gulf shrimp cocktail and it's to die for. The real kicker is their cocktail sauce...best ever. Fortunately, they give away the recipe on their website so even if you don't have a Market Street restaurant near by you can still have their gulf shrimp cocktail.

Here's What You'll Need:

1 pint chili sauce
2 ounces tomato juice
2 ounce prepared horseradish
1/2 teaspoon white pepper
1 teaspoon salt
1 teaspoon dry mustard
juice of 1/2 a lemon
1 tablespoon Worcester sauce

Here's What You'll Do:

Simply mix all ingredients together until well blended.
Serve with chilled cooked jumbo gulf shrimp.

Out with the Old...In with the New

I wasn't sorry to say good-bye to 2011. It was a tumultuous year. The highs were pretty great, but the lows were devastating. So, 2011, I bid you farewell and welcome 2012!

Of course, I haven't made any New Year's Resolutions. I never do. I hate making resolutions. Mostly, because I hate to fail and, in my humble opinion, New Year's Resolutions are just the perfect recipe for failure.

I'm far too much of a realist for all of that nonsense. I mean seriously, have you really ever succeed in keeping your resolutions?

I didn't think so.

I prefer a more conservative method for making life changes, like...Baby Steps.

Yep, Dr. Leo Marvin* had it right.

Making changes in small incremental steps works better for me than setting up big goals that are completely ridiculous and overwhelming.

Everyday I simply search to find and to give joy, humor, love, understanding, kindness and gratitude in my life. And I never fail. Even on the worst of days, even if I can only find a little, I am successful.

So, like the Tortoise (you know, the one who was buds with the Hare) I keep moseying along.

As far as 2011 goes, like I said, it wasn't all bad. We had some really grand adventures. It was the busiest travel year for us than any other by far. I visited fifteen different states and our Nation's Capitol, some for the first time and some where return trips, I dipped my toes in both the Atlantic and the Pacific Oceans, and I was able to go to Italy for the very first time. Can't complain about that. (Although the food poisoning in France sucked, but still it was all great.)

I was able to see all of my immediate family, lots and lots of extended family, re-connect with some dear friends, and even made some great new friends. Can't complain about that either.

It was a pretty healthy year. Nothing bigger than an occasional cold and I definitely can't complain about that!

The negative stuff I'm leaving behind with the past year and looking forward to what this year will bring. I already have plans for a return trip next month to my beloved North Shore to celebrate twelve years of marriage to my HOBL, a trip or two up to Washington to see family, an expedition to Bora Bora, and spending Halloween with the Grandbabies in Disneyland. (What could be better than spending time with two of the joys of my life in the happiest place on earth?!?!?)

I'm keeping my fingers crossed that Ashley and Jordan will move to Utah and I'm secretly hoping to hear wedding bells followed by the pitter-patter of some more grandbaby feet! Wouldn't that be grand and glorious?!?

I'm sure 2012 will bring some surprises, some trails, and hopefully many days filled with joy, humor, love, understanding, kindness and gratitude.

Bring it on!

Thankful Thursday ~ Grandmas

Grandmas are one of life's great blessings and I have been blessed in my life to grow up with three of the very best.

My Grandma Lewis

I had the shortest amount of time with my Grandma Lewis. She died when I was just ten-years-old. But, even though we only had 10 short years, I have the most wonderful memories of her.

She taught me how to cook, bake, sew, and crochet. She taught me about things like proper shopping etiquette at Nordstrom's, Frederick and Nelsons, the Francis Shop and D'Orrs, and lunching at Bremer's.

My Grandma Lewis took me beach combing for shells and sand dollars, and clamming for razor clams at Ocean Shores. She showed me how to put tinsel on the Christmas tree, one strand at a time, instead of throwing handfuls on in big globs. She let me play with her beautiful and fragile Nativity set each year and never seemed nervous about the possibility of me breaking it.

She stayed with me all night in the downstairs bedroom when I was afraid that the evil queen Maleficent lived in the closet (this went on for years). And, the time I knocked over a lamp and caught the carpet on fire, then tried to put it out with one of her dresses, which also caught on fire, she never even got angry with me.

She taught me how to cut the rose bushes, took me cherry and plum picking every summer, helped me bake my first blueberry pie...which I accidentally dumped all over the floor as I was about to put it in the oven, so we had to make all new filling, and you guessed it, she didn't get mad...and she let me make chocolate chip cookies every Saturday.

One cold and snowy winter, my Grandpa Lewis' Brittany Spaniel had a litter of puppies in the middle of the night. They were half frozen to death and my Grandma gently wrapped them in little towels and laid them all out on a cookie sheet. She then stuck them in the oven to warm them up. She took them out of the oven, one at a time and gently rubbed them back to life, then put them back in their improvised incubator. All but one one survived.

My Grandma Lewis was patient, loving, and kind, but her time on earth was far too short. She was only 67 when she died. Her death was my first real experience with loss and grief. Her sudden absence left a huge hole in my young life and I missed her terribly.

My Grandma Nuttall-Eldredge

My maternal grandmother, Grandma Nuttall-Eldredge, was a constant presents in my life. We never lived more than a couple of miles away from her when I was growing up. Looking back, I see now that I took it for granted that she would always be around. After all, she always was...birthdays, Sunday dinners, family picnics, church...she was there, always. I grew up, got married and moved away and whenever I came home, Grandma was there.

I loved going to my Grandma Nuttall-Eldredge's house, it was full of treasures and secret hiding places. I remember an old manual typewriter that she would let us play with. I would sit and type away and pretend to be writing a newspaper or book, even though I was too little to actually spell anything yet. When I'd show her my work she was always impressed and made me feel special.

She was an artist and was always working on one of her paintings. I remember a few landscapes and fruit bowls she had painted, but it was her florals that I remember best. They were beautiful and I always wished I could draw and paint like she could.

She had a big yard and she always grew a big garden. I can still picture her in her sun hat out working in her garden planting, weeding or harvesting. She would have us over for Sunday dinner and we would benefit from the things she grew. She made the best chicken dinner with the best pop-overs in the world.

The best thing in my Grandma's yard was the giant old weeping willow tree. There was a rope swing on it, which we loved, but even better was climbing up into its branches as high as we could. I have many happy memories of sitting up in that tree with my brother or with my cousins.

My Grandma also grew concord grapes, which she made the best juice from, and she grew big fat juicy red raspberries. To this day I can't look at a raspberry and not think of my Grandma.

I can't ever remember a time when my Grandma wasn't at church with us. She was a pillar of faith and set the bar high. My Grandma lived to be 92-years-old and died in 2002. She was loved by everyone who knew her and she was a great example.

My Grandma Ames

When I think of my Grandma Ames, the things that come to mind are Thanksgiving and hugs. When I was little, my Grandma Ames lived in Utah, so we didn't get to see her very often. Mostly, I remember going to visit at Thanksgiving, and it was great.

I remember how warm her house was from the bitter cold Utah winter. There was always snow when we went there, and for us kids it was truly a wonderland. Not only was her house nice and warm, but so were her hugs. My Grandma Ames gives the best hugs ever.

My Grandma Ames is the very definition of a sweet grandma. She is one of the kindest and sweetest people I have ever known. She always make me feel loved and wanted.

One summer, when I was about 11, my sister Denise and I went to visit my Grandma (and Grandpa) in Utah. Just the two of us girls went. I think it was our first airplane ride and it was certainly our first trip traveling without parents.

She had a purple bedroom (purple is her favorite color) with a velvety purple bedspread that I thought was just beautiful. In the purple bedroom she had these little glass dolls that my sister loved to look at and hold. My favorite one was a girl in a wine colored dress holding a basket full of grapes with a little brown scarf on her head.

While we were there visiting, we went camping in the mountains where they had property with a travel-trailer. We went for walks with Grandma in the forest and she even took us horseback riding.

When I was about thirteen, My Grandma Ames moved up to Washington. My Grandpa Ames was very ill. I remember the day they arrived and how excited I was to have them be so close.

After Grandpa died, Grandma went on a church mission to a tiny and very primitive island in Panama. She had to learn Spanish, there was no running water and no indoor plumbing, she lived in a grass hut, traveled by canoe, and she slept in a hammock for two years. I remember thinking how brave and adventurous she was.

Luckily, my Grandma Ames still lives in Washington and I get to see her when I go home to visit. She will celebrate her 90th Birthday this April and we are having a big family reunion in the summer to commemorate it.

I was also blessed to grow up knowing and loving three Great-Grandmother's and I am thankful for the privilege and for the blessings these amazing women have all brought to my life.

WTH Wednesday...Outrageous Christmas Gift

Outrageous and tragic. That's the only way to discribe this disturbed so-called mother and the Christmas gift she gave to her seven-year-old daughter...a $9000.00 gift certificate for liposuction.

I am not kidding.

Sarah Burge (pictured above) of St. Neots Cambridgeshire, England is a 51-year-old plastic surgery addict who has spent $800,000.00 on plastic surgery for herself. I guess she feels that's a path she wants her daughter, Poppy, to follow in life as well.

Last year, for Poppy's seventh birthday, Sarah Burge gave her daughter a $10,000.00 gift certificate for a boob job. And, in 2010, when Poppy was just six-years-old, Burge had a pole installed in her home so she could teach Poppy to pole dance.

WTH is going on here?!?!?

This bitch is nuts.

Doesn't the UK have a child protection agency? Because this poor child clearly needs protection from her crazy mother.

And, not to be rude, but does this mother really want her daughter to be her clone? I mean seriously, has she looked in the mirror lately...can we say Tire-Biter?? Woof!

Favorite Find of 2011

Sangria!

With just a few hours left in 2011 I discovered this...

To mark the end of the past year and to celebrate the coming of the new year, Mark and I had dinner at our most fave Mexican restaurant, La Costa. While waiting for our server to return and take our order, I perused the drink selections on the menu and noticed that a non-alcoholic sangria was offered.

Hmmmmm...I was most intrigued.

I asked our server to tell me about it. He said it was just what it said, red sangria in a bottle with gas (carbonated) but no actual alcohol. He said it was his favorite thing to drink and if I liked real sangria, I would love this.

YES!! PLEASE!!! I love sangria. But obvi, I can't drink real sangria. So I waited, with much anticipation, for my faux sangria to arrive.

Let me tell you that I thought I had died and gone straight to Heaven. It was divine. It totally tastes like real sangria! But at two-bucks a bottle and a 10-mile round-trip drive to get it at La Costa, it was going to be an expensive three-times-a-day habit.

I asked our server if it was sold anywhere other than at the restaurant. He told me that he buys his at Wal-Mart in the Hispanic food section.

I didn't even know Wal-Mart had an Hispanic food section!

After dinner...and it was a truly lovely dinner...I instructed Mark to drive to the nearest Wal-Mart. We went in, found the Hispanic section (shock of my life) and there, sitting on the shelf, just waiting for me to come along and scoop them up, were bottles of my new BFF.

And, they were just sixty-nine-cents a piece. Happy New Year to me!!!

Uncle Rick

Today's stroll down Memory Lane is a two-gen deja vu. Pictured above and just below is me in 1963 with my Uncle Rick, my Mom's youngest brother. The pictures were taken at my very first home in Bremerton, Washington when I was just a month or two old.

And then this picture is of me with my Uncle Rick holding my baby 25 years later. Meghan was just two-months old when we brought her home from California to meet the whole fam.

I love that I have the two sets of pictures. I love how it shows time marches on, and yet how my family never really changes and is always there for me.

Sunday Supper Secrets...Loaded Baked Potato Casserole

Ok, so I forgot to smear the sour cream all over the top before I took this picture...not to mention the chives. You're just going to have to imagine it.

What's not to love about loaded baked potatoes? Well, aside from the yucky skin and how long it take to bake them in the regular oven, and you've got to admit that oven baking is way better than microwave baked.

This recipe is my way to speeding up the cooking time and getting rid of the of the skin problem.

Here's What You'll Need:

3-4 lbs. Potatoes
1 Cube Butter
Bacon Crumbles*
Shredded Colby-Jack Cheese*
Shredded Parmesan Cheese*
Chives or Green Onion, chopped*
Salt and Pepper to taste

*I don't measure the bacon, cheeses, or chives/green onions. I just pile it on. The ratio I use for the cheeses is about 1/3 part Parmesan and 2/3 parts Colby-Jack.

Here's What You'll Do:

Peel and quarter the potatoes.
Steam until fork tender.
Arrange cooked potatoes in a 9x13 inch baking dish.

Slice butter into 8 pats, place on top of potatoes.
Cover with the grated cheese.
Top with bacon crumbles.

Bake in 350 degree oven about 10-20 minutes, or until all melted and gooey.

An opportunity for a quick pre-Christmas trip to my beloved North Shore provided some much needed mental and spiritual relief from the stresses of life. We joined our friends, Dave and Diane, for a little fun in the sand and sun.

We snorkeled in Hanauma Bay, swam with some sea turtles, visited Waimea Falls, saw a couple monk seals, ate lots of great food, stopped by the Polynesian Cultural Center, and laughed harder and more often that I can ever remember.

Our trip was short, sweet, and jam-packed. I took a few pictures, but not very many compared to usual. We were just too busy for me to play Nat-Geo photographer. Most of my pictures were from Waimea Falls. Every time we visit Turtle Bay I say I'm going to go to the falls, but we never quite fit it in. This trip we finally made it fit in to our schedule. I'm so glad we did! It is just beautiful.

Even though Hawaii is tropical, they still have a winter of sorts. December is in the heart of the rainy season and there had been very heavy rains the week before we arrived. All that rain caused the falls to be full, heavy, and muddy. Swimming wasn't allowed while we were there. The water was too swift and murky.

Quite the difference.

Even with the brown and dirty water, it really was beautiful. I enjoyed its tumultuousness...yes that is a word...I checked.

The gardens are amazing. Every time we turned a new corner I said "I want to build a house right here!" It's paradise. A true Garden of Eden.

They're pretty much the only animal I am really afraid of. Lizards are simply snakes with legs, so I pretty much hate them too. I swear I learned (somewhere) that Hawaii also has no lizards. No snakes = no lizards, right? Our friend Dave was determined to burst my belief that there are no lizards in Hawaii. I was so sure I was right. And then Dave found this little monster...

Is it just me or do you seriously want to just smack someone every now and then? I don't mean at random...I'm not completely insane...I mean stupid people doing stupid things.

Politicians, World Leaders, and Utah Drivers usually top my list. Which is why I've been trying to limit my news watching and driving.

But there are plenty of other stupid people out there to be annoyed by too...like the Costco shoppers who just walk away and leave there cart unattended in the middle of the aisle causing the mother-of-all traffic jams...I FREAKING HATE THAT!

And don't even get me started on Wal-Mart people. I avoid Wal-Mart like the plague because I inevitably leave there feeling homicidal. It's like the stupid-people Mecca or something.

The good news is that often the people I want to smack are comical. So there is potential for a good belly laugh. I'm still deciding. I don't want to be too negatory in my writing, or someone might want to punch me in the face.

Today I am incredibly thankful to live in a Country where I have the freedom to live as I choose. I know how blessed I am to live in peace and prosperity. I try very hard to never take my circumstances for granted, although sometimes I must admit I do lapse.

I am grateful for the Constitution of the United States and for the Bill of Rights which were so carefully crafted for my benefit (and yes, I have actually read them!) and I am now and forever deeply indebted to those who have fought to protect my liberties.

WTH Wednesday...North Korean Brainwashing

As far as cleansing the world of evil dictators goes, 2011 has been a pretty good year. Let's face it, the planet is a much better place without the likes of Muammar Gaddafi and Kim Jong Il.

You won't see me shed any tears but, astonishingly, there are plenty of tears flowing in North Korea today.

WTH is that about?!?!?

Seriously. I need someone to explain to me how anyone in all of North Korea could possibly mourn the death of such a monster. I don't get it.

Mark thinks the people are being paid to cry and act sad. Sounds a little far- fetched to me, but you never know.

I would think that after years of living under the brutal hand of Kim Jong Il the people of North Korea would be celebrating his timely death. The current state of mourning is simply baffling to me. Are they completely stupid or are they totally brainwashed?

Maybe they know something we don't know. Maybe they are even more afraid of his son taking over.

We spent Christmas Eve with my sister and her family this year.

I'm pretty sure that both Vic and Alice's favorite part of the evening was the opening presents part.

I found these cool laser-tag remote control battling tanks for Vic...

I also found these goofy straw-glasses the last time Mark and I were in Las Vegas...

~Christmas Day~

Christmas morning and day was spent quietly at home with Hollie and Meghan, and Meghan's boyfriend Chris. We opened gifts, Meghan made us Christmas breakfast and baked cookies, We took naps, watched movies, and ate far too many goodies. It was a good day.

Sunday Supper Secrets...Sage Sausage Stuffed Mushrooms

If given the choice, I prefer appetizers over desserts any day. Stuffed mushrooms are at the top of my list for fave treats. And these delish little gems are sure to please any group for any occasion.

Any type of sausage can be used from spicy Italian to plain old breakfast, but I like sage sausage the best. It's the extreme in savory flavor. You could also use Italian bread crumbs instead of plain for a little different taste, but I wouldn't recommend it with the sage sausage as the flavors will compete.

Here's What You'll Need:

12 ounces sage sausage
18 white button mushrooms
16 ounces (2 bricks) cream cheese, softened
3/4 cup dry bread plain crumbs
3/4 cup red cooking wine, divided
1 tablespoon chopped fresh parsley (if dried, use 1/2 tablespoon)

Here's What You'll Do:

Evenly brown sausage in a large skillet.
Drain off and set aside.
Clean mushrooms.
Remove stems, chop and then set aside.
In a mixing bowl combine chopped mushroom stems, cream cheese, and bread crumbs.
Stir in sausage and 1/4 cup of the red cooking wine.
Fill mushroom caps with the sausage mixture.
Place in a baking dish.
Pour the remaining red cooking wine over the stuffed mushrooms.
Bake in a 325 degree oven for 25-30 minutes, until browned.
Serve hot.

Ok, ours isn't that bad but still, it's pretty pathetic.

Meghan volunteered to put up the tree this year while I was in Oahu. And, technically, she did. The tree is up and the lights are plugged in (it's a pre-lit tree) and working. However, there are no ornaments, no star on top, and not even a skirt around the bottom. And, unless a little elf shows up, that is exactly how it's going to remain.

WTH is my problem this year?!?!?

An Explanation is due.

In my last post I forgot to include an explanation of how Isabella was injured. Sorry. Obviously, it's been a bad few days.

Here's the scoop...my sweet little Gabriella went all Cujo and attacked Isabella. This has been happening a lot lately, although we've never had any serious injuries before. Until last night, I had been the one who was most seriously injured.

Turns out breaking up a dog fight is a very dangerous activity.

In my effort to save them from each other, I would get between them, and in their continuing effort to kill each other, I would get bit. Sometimes repeatedly. Sometimes badly. I actually have a perfect set of teeth marks on my thigh from a couple years ago. (It looks like Ted Bundy got a hold of my leg.)

Little Stinkers.

We have been trying to work their issues out, needless to say without success, for quite a while now. I still remain optimistic as we have found a true (and local) Dog Whisperer who is coming to teach us all how to get along. It will be like family therapy...with puppies.

I'll let you know how that goes.

I shoulda known. I mean really, things were actually going good. After all, I got to spend a week in my beloved North Shore swimming with sea turtles and kickin it with monk seals.

Life was good. It was destined to happen...to come back home just to get bitch-slapped by reality. Several things have put me in a foul bah-frickin-humbug mood, but tonight was the cherry on top.

Can you see the row of stitches on Isabella's little ear? Yeah, those 10+ stitches cost me two-and-a-half hours in the puppy ER and $300.00 tonight.

Sunday Supper Secrets...Coconut Macadamia Nut Popcorn

This is the BEST popcorn in the Universe. For real. I've decided to name it Aloha Popcorn. Once you've tried this stuff you may never want caramel corn again. But, I have to warn you, it's just like crack...highly addictive.

Here's What You'll Need:

4 quarts popped popcorn (3-4 bags of microwave popcorn)
2 cups salted macadamia nuts
2 cup coconut
1 cup butter
1 1/3 cups sugar
1/2 cup light corn syrup
1 Tablespoon vanilla

Here's What You'll Do:

In a large bowl combine popcorn, nuts, and coconut, set aside.
In a large heavy bottomed pot combine and bring to a boil the butter, sugar, and corn syrup.
Boil until temp reaches jelly (220 degrees) on a candy therm.
Remove from heat, stir in vanilla.
Pour mixture of the popcorn, mix well.

Lilikoi (a.k.a. passion fruit) is not available in any grocery in Salt Lake, at least not that I am aware of, so I can't even make it myself. I have decided to smuggle a bag stuffed full of my favorite Hawaiian fruit home on the airplane.

After Mark's mom passed away last year I found this picture of Mark and and his brother Greg. It was take in Waikiki. Greg is either two or three3, so Mark would be seven or eight.

Santa must have been cooking in that suit in the Hawaiian tropics. It's strange for me to think that Mark (and Greg, too) never had a white Christmas all those years living on Oahu. I'll bet it came as quite a shock when Mark was 15 and the family moved to Ashton, Idaho where the snow heavy and the cold is long come winter.

This is the only 'Santa' picture I've ever seen of Mark. I love seeing the boys so little.

I also love the creepy plushies hanging behind Santa. Nothing says Christmas like a strangled clown, raccoon, and monkey.

Sunday Supper Secrets...Scottish Shortbread

My Grandpa Lewis loved shortbread. He used to share it with me when I was a little girl. I loved it, too...and still do.

Here's What You'll Need:

2 sticks (1 cup) butter
1/2 cup confectioners sugar, plus extra for dusting if desired
2 cups flour
1/4 teaspoon baking powder
1/8 teaspoon salt

Here's What You'll Do:

Mix together the butter and sugar until creamed and fluffy.
Thoroughly blend in flour, baking powder, and salt.
Use a cookie press to press dough onto baking sheet.
Bake for 20 minutes at 325 degrees or until just brown.
Do not over bake.
Remove form baking sheet to cool.
Dust with confectioners sugar if desired.

WTH Wednesday...Political Polling

I don't know about you, but I am sick of hearing about the polls.

Last week America hated this or that. This week America loves whatever they hated last week. So says the polls.

Here's what I want to know...who exactly are the polls? And why are these people so fickle?

I know that I'm not one of the polls. Nobody ever polled me about anything. And, if I hated something last week, I can pretty much guaranty you that I still hate it this week, and will hate it next week, too.

It seems to me that the results of the polls differ dramatically depending on which group or news channel is taking/reporting the poll. My guess is that the only people who believe the polls are the ones who agree with the results of a particular poll.

I don't believe any of them. I think they are all skewed. I think the pollsters do things like stand outside a Baskin Robbins and ask every person who comes out licking an ice-cream cone if they like ice-cream.

Well, no shit Sherlock. They're all going to say yes. So the poll would result in something like all Americans love ice-cream.

Same thing goes for politics. If the pollsters stand outside a State's Republican Party headquarters and asked everyone who exits the building if they like President Obama of course the poll will end up with a negative approval rating.

WTH?!?!? Are there really people stupid enough to believe this stuff?

The most annoying, and prevalent, polls lately are the GOP Presidential Candidate polls. The elections are still a year away. There isn't even a nominee yet. But that doesn't stop the polls from declaring who's going to win and who doesn't stand a chance, at least as of this week.

I wish some polling organization would call me and ask me what I think. I'd tell them I think their polls are stupid, and then I'd hang up on them.

Headache: Day 13

I have had a monster headache for thirteen days. It just will not go away. I've tried everything I can think of to get rid of it...Tylenol, aspirin, Aleve, Motrin, Excedrin, Demerol, and finally Oxycontin.

Nothing is working.

I'm feeling a little cranky. My headache is disrupting my sleep and anyone who knows me very well knows that I cannot function (or be nice) without my 10-12 hours of sleep a day.

Maybe I need a Hawaiian Holiday???

Today is my great-niece Shanna's 5th birthday, and this picture is when she first came home from the hospital.

Shanna is my very first great-niece, or nephew for that matter, and I just adore her. She is sweet and smart and cute as a bug!

I cannot believe she is five-years-old!! She was just a new-born babe...like yesterday.

I love being an Auntie! I know, I say that ALL THE TIME. But it's just so true. I love Shanna with all my heart and I am so blessed to be her Great-Auntie!

Sunday Supper Secrets...Salted Caramel Popcorn

Question: What's better on a cold December Sunday evening than fresh made caramel popcorn?

Answer: Fresh made Salted Caramel Popcorn, of course!

I just use the caramel-corn recipe that the Grandkiddos call Grandpa Allison's Caramel Corn, a few bags of Orville Redenbacher's Movie Theater Butter microwave popcorn, and then I liberally apply some salt.

There is one little problem...the salty-sweet combo is ADDICTING! You won't be able to stop eating the stuff.

Here's What You'll Need:

1 1/2 Cups Sugar
1 1/2 Cups Brown Sugar
1/2 Cup Water
1 Cup Light Corn Syrup
2 Sticks Butter or Margarine
4 Bags of Orville Redenbacher's Movie Theater Butter microwave popcorn, popped then set aside
1/2 teaspoon Baking Soda
1 teaspoon Vanilla
Kosher Salt (course salt) to taste

Here's What You'll Do:

Dump all ingredients into a large heavy bottomed pot EXCEPT for the popcorn, baking soda, and vanilla.
Cook together on medium-high to high until candy thermometer reaches bewteen 234-238 degrees.

Remove from heat.
Mix in baking soda and vanilla.
Pour over popcorn and mix well.
While caramel is still warm and sticky, liberally sprinkle with Kosher salt.

Go ahead, try to resist that, I dare you.
